Storing flour on a HoReCa site: the short rules

Flour absorbs moisture and odours. Half of all «supplier problems» are born in the customer's own store room.

Basic conditions

  • A dry room, relative humidity up to 70%, with no sharp swings in temperature.
  • Bags on pallets, not on the floor: at least 10–15 cm off the floor and 30 cm from the walls.
  • No proximity to cleaning agents, spices, fish or any other source of odour.
  • Shelf life is 12 months — but that is an upper bound, not a target.

Rotation

FIFO sounds trite until three bags from last quarter turn up in the corner. Write the receiving date on the bag with a marker — it is cheaper than any stock system.

Summer on the coast

In Batumi and along the coast humidity runs high in July and August, and flour takes it on faster. The practical conclusion: cut the stock, raise the delivery frequency. City delivery by small vans exists for exactly this — three deliveries of a tonne beat one of three tonnes that goes damp.

Goods-in

Check that the bags are intact and that batch marking and documents are present. A batch without a number is a batch you cannot raise a claim against later.
